Preheat the oven to l400C/2750F/gas mark 1. Butter the baking tray. Melt the butter, syrup and both sugars in a saucepan. Do not allow to bubble, Mix in the oats and the cocoa. Use a fork to press the mixture into the baking tray and bake for 1820 minutes. Leave to cool completely before removing from the tray. Yummy! Sunflower and Onion Rolls by Dan Lepard Recipes created by Dan Lepard, specialist baker and author of `The Handmade Loaf' 1 small onion (roughly 150g), thinly sliced 6 tbsp sunflower oil 400g Bacheldre Organic Stoneground Strong Malted Blend flour 1 1/2 tsp fine salt 2 tsp easyblend (or other) dry yeast 100g sunflower seeds 250g cold water Simnel Cake This is a new angle on a traditional recipe. Simnel Cake was not originally baked at Easter but on Mothering Sunday as a kind of midLent treat. This recipe from Delia online is, as always from Delia Smith, a great cake for a special occasion. Allow to cool. Toss the flour, salt, yeast and sunflower seeds together in a mixing bowl, then combine the onions, oil and water, pour this into the flour and mix to a soft sticky dough. Don't knead it, but simply cover the bowl and leave in the refrigerator overnight for at least 8 hours (but no more than 14). The following morning remove the dough from the bowl, knead it for 10 12 seconds on a lightly floured surface, then replace in the bowl and leave for 15 minutes at room temperature. Roll the dough into a rectangle about 3cm thick and cut into 6cm squares. Evenly space on a tray, and then pop the tray inside a large old plastic bag to keep the dough moist. Leave at room temperature for 2 1/2 hours until doubled in height. Heat the oven to 220C (same for fan assisted), gas 6 7. Bake for 25 30 minutes until golden brown and light in weight. Don't laugh ...it happens to us all! 3 cloves 5 peppermint leaves, finely chopped. 5 sage leaves 30ml echinacea purpurea tincture (from health food shops) Echinacea Throat Spray n Place the cloves, peppermint and sage leaves in a small glass bowl, then add the echinacea tincture. Cover and leave to stand for 2 weeks in a cool dark place. Gradually the colour will change n Strain the liquid through a looseweaved muslin placed in a strainer, squeezing all the liquid from the herbs by hand. Filter the liquid into a sterilized spray bottle. Use spray as often as needed Storage keeps in the fridge for up to one year. Flatulence Four Winds Tea 1tsp caraway seeds 1 tsp fennel seeds 1 tsp chopped peppermint leaves 1 tsp chamomile flowers 250cl hot water n Crush the caraway and fennel seed in a mortar & pestle to help extract the oils. Combine the seeds with the peppermint and chamomile. Place in an airtight container. n To make the tea, put 12 tsp of the mix in 250ml hot water and allow the herbs to infuse for about 15 minutes. Sip slowly while still warm. Use drink a cup when required, up to 4 times a day Storage the herb mixture keeps very well in an airtight container for several months. Make the tea fresh before drinking Results will vary from person to person and may be affected by a number of factors. Some remedies can work for some people and not for others. You should consult a doctor to get a correct diagnosis of your condition before trying natural remedies, and particularly if you are on any other medication. To check for allergies always carry out a 24 hour patch test on a small area of skin before following the recommended dosage. It's over 10 years ago since I learnt the simple lesson of how to deal with a very prevalent problem that's a blight on our green and pleasant land. I was paying a visit to my brother's 50acre estate in North Wales and to my initial dismay, whilst we were out exploring its wilder reaches, I caught a glimpse through the trees of somebody carrying a felling axe in a decidedly menacing manner ... Fortunately, it turned out to be a native neighbour who was doing his part to preserve some of the magnificent indigenous oaks that pepper these rocky sloping fields that make up much of this very lovely part of the UK! His axe was more than manenough for the task in hand, and it was razorsharp, as he quickly proved. Deftly he swung the blade with just the right force to drop its shiny edge through a stem, the thickness of my arm, of the ivy, all but enveloping, the metre diameter trunk of one of these superb 19th century oaks. It was just the right force, because he barely grazed the wizened bark of the old oak. He swung again and did exactly the same about a metre farther up the ivy's coarse stem. All around the oak's trunk he carried out this simple ritual till he'd effectively left a bare midriff to the oak. You could almost hear the old tree breath a thankful sigh of relief as the last stem was severed. There and then (the late) John Nicholas had demonstrated a seemingly lost art of lookingafter some our best loved flora. We may laugh at the rather derogatory term `treehugger'; but here it was genuinely inpractice and to great effect.
