The wonderful thing about the `grow your own' revolution, is that some people have more food than they know what to do with and are selling it from their gardens at a fraction of the price of the supermarkets. Most hazelnuts grown in Britain are of the variety Kentish Cob, which was introduced in the early 19th century. Up to a century ago, cobnut plantations or "plats" were an outstanding feature of the Kent countryside extending over some 7,000 acres among the apple orchards and hops. Today cobnuts are an endangered regional and seasonal delicacy with only around 50 growers remaining. A growing problem is early cheaper cobnuts from France and Turkey, greedily harvested too soon, which are offputtingly bitter and green tasting, which undermine the appetite for Kentish cobnuts. Cobnuts are marketed fresh, typically from the middle of August through to October, although stored nuts may be kept until Christmas. Allen's Farm is the only certified organic cobnut farm in the country and is run by 4th & 5th generation farmers. Allen's has Countryside Stewardship status to conserve the heritage of its rare crop. The trees are grown the way they have been for centuries Southdown sheep prune shoots, and nuts are harvested by hand. Even the baskets used to collect, and the hessian sacks that store the nuts have been used for almost a century. Delicious served with spinach for a healthy, wholesome meal. Spaghetti with Meatballs and Asparagus Serves 4 10 minutes preparation, 20 minutes cooking . 600g pork sausages deskinned 350g Seeds of Change Signature Mediterranean Vegetable 2 gloves of freshly chopped garlic 2 tablespoons fresh sage, chopped 1 bunch of asparagus, washed and chopped 25g butter 500g Seeds of Change Spaghetti freshly grated parmesan, to serve Roll the sausages into small balls and drop in a hot frying pan with a teaspoon of sunflower oil n Add the chopped garlic and sage followed by the asparagus and stir for 5 minutes. Next add a little bit of butter and add the Seeds of Change Mediterranean Vegetable sauce. Cover and simmer gently for 15 minutes until the meatballs are cooked through n Meanwhile, cook the Seeds of Change Spaghetti in boiling water until al dente, drain and mix with the sauce n Plate and serve with grated parmesan n Serves 6, Prep time: 10 mins, Cooking: 2¼ hrs 1.8­2.2kg boned loin of pork, rind and most of the fat removed Sea salt and freshly ground black pepper to taste 2 tbsp olive oil 6 pints of Yeo Valley Organic Whole Milk 4 tbsp Yeo Valley Organic Unsalted Butter 5 cloves garlic, peeled and halved 1 small handful fresh sage leaves Zest from 2 lemons, in thick strips white pith removed Generously season pork on all sides with salt and pepper. Place a heavybottomed saucepan, that is just large enough to hold the pork, over mediumhigh heat. n Add oil into the pan and add pork. Brown on all sides, turning only as necessary. n Transfer pork to a plate; carefully pour off and discard the fat in the pan. n Place a separate pan over a medium heat and warm the milk. Do not boil. n Return the heavybottomed saucepan to medium heat, add butter and heat until melted. n When foam subsides, add garlic and the sage and cook just until garlic is softened but not browned. n Return pork to pan and add enough of the hot milk to submerge pork by at least threequarters. n Increase heat to mediumhigh and bring milk to boil. n Immediately reduce heat to mediumlow, add lemon zest and partially cover. Simmer gently for 1½ to 2 hours or until internal temperature of the pork is 155°C. Ladel extra milk over if the pork begins to look dry. Note: Resist the temptation to disturb meat while cooking. The milk will curdle and form brown nuggets; this is good. n n Serving Suggestion Spoon cooking sauce over top of pork and serve with wilted spinach, crusty Italian bread or rice. Grow Your Own Food with Dirty Nails The Pro's and Con's of Using Peat Peat is partially decomposed plant debris and is located in bogs and moors. These are basically cool, waterlogged environments. Taking thousands of years to form, peat is arguably the best growing medium for cultivating seedlings of a wide range of plants. It is stable, long lasting, well aerated, moisture retentive and an extremely popular choice in the greenhouse or shed as potting compost. However, the peat industry for horticultural purposes has been responsible for the destruction of 94% of British peat lands in the latter half of the 20th century. These areas are, coincidentally, home to a range of rare or specialised plants and animals which are threatened by this habitat loss: carnivorous plants such as sundews, butterworts and bladderworts, nightjars (summer visiting relatives of the woodpecker) and many species of weird and wonderful insects. There is also a globalwarming issue linked with peat extraction. Being plant matter, a vast amount of carbon is locked up in peat. When it is removed and used, this carbon is released into the atmosphere which enhances the 'greenhouse effect'. The quantities of carbon contained herein, and potential damage caused by its liberation, should not be underestimated. A chimney balloon is a simple, cheap and efficient way to stop the loss of warm air from your room up the chimney, and the flow of cold air from outside coming down the chimney. Warm air cannot escape Once inflated the balloon grips the chimney walls and your chimney will no longer draw warm air out of your room.
